A recipe for slow mornings in a fast life

What I love about this recipe is that it’s quick, healthy, and so delicious. The first time I made it was years ago, and it instantly became my favorite autumn (and winter) morning breakfast. I hope you’ll love it too!
Most of the time, I serve it with yoghurt, but you can also combine it with plant-based yoghurt, oatmeal, or porridge.
What I used
✦ One butternut squash
✦ 1–2 bananas (depending on the size of your pumpkin)
✦ Cinnamon
✦ Olive oil (EVOO)
✦ Splash of water
✦ 150 ml yoghurt
For the topping
✦ Granola (I make mine myself, will share that recipe soon)
✦ Pumpkin seeds (use the ones inside your butternut)
✦ A handful of blueberries
That’s more than enough for 3 people. And if you’re by yourself, you can portion it out and pop it in the freezer.

How I made it
✦ Preheated the oven to 200°C.
✦ I peeled the pumpkin and chopped it into medium- sized chunks. I saved the seeds. They are edible, tasty, and healthy, so use them as a topping for your bowl. Nothing goes to waste here :-)
✦ I placed the chunks in a baking dish and drizzled them with olive oil. I added the cinnamon and gave everything a good swirl. I love cinnamon so I used quite a lot, feel free to adjust it to your liking.
✦ I baked the pumpkin for around 30 minutes, but every oven has its own personality so keep an eye on it. You’ll know it’s done when the pumpkin iss soft and the smell of cinnamon fills the kitchen.
✦ Once the pumpkin was cooked, I let it cool. I washed the pumpkin seeds and removed any pulp. Then I dried them as well as I could, spread them out on a lightly greased baking sheet and roasted them in the oven. The seeds are ready when they turned golden brown.
✦ I put the pumpkin chunks into a bowl together with the banana(s), blended everything with a hand mixer until it was silky smooth and poured it over the yoghurt.
If needed, add a splash of water to reach that delicious creamy texture.
And that’s about it. Top with the granola, pumpkin seeds and blueberries and enjoy your slow morning.

Life-wise: Nourishment begins with noticing, so take a good look. They are beautiful! Choose a bowl that brings you joy, let the morning light fall on your table and enjoy your pumpkin. Don’t rush it.
