So I’m not here to add more oil to the fire. I’m here to help you understand food better, so you can eat without food taking up all of your mental space.

Hi! My name is Nikki
There was a time when I ate mostly from my head. Always counting macros, avoiding “bad” foods, chasing health through rules. The result? Even while eating all the right things, I still suffered from awful stomach pains and developed an eating disorder. My second one.
My journey made me realize: I don’t want to “hack” my health. I don’t want rules dressed up as healthy, pretending that real life doesn’t exist. And I definitely don’t want to give up caffeine… or cheese.
I also don’t want you to think nourishment is a mountain you’ll never finish climbing.
I created Dertien because yes, there’s always something new. Something better. Something to avoid. And most of it sounds convincing enough to make you question what you’re already doing. So instead of adding more, let’s strip it back a little. Not to make it simplistic, but to make it clear again.
Think of it as… well... as a ‘f-you’ to diet culture :-)

Is it a diet?
Nope. Not even close.
If you’re looking for strict meal plans, health hacks, and a list of “good” and “forbidden” foods… I’ll give you a refund. Really. We are not meant to be.
What I do? Share is everything I know about nutrition. So you can understand the truthful side of it. You learn how to support your body in a way that actually works for you.
So yes, ultimately this is a program about food.But it's also about how you cook it. How you enjoy it. And how you feel about it.
Without overthinking every single bite.
What’s the difference between the course and the program?
Me. Basically.
The Honest Eating Method course is a 3-week online journey. You go through it on your own. Of course, I’m there if you have questions. But most of the time, you won’t really see me.
The program is different. That’s where we work together for 5 weeks. Same foundation, just… deeper. More personal.
We meet every week in a 1:1 online session. We take time. We look closer. And I’m there with you the entire time.
I like to think of the course as dipping your toes into the water. Just to feel it. To see if it fits you. The program? That’s when you actually step in.
Why did you create The Honest Eating Method?
I know… there’s no shortage of nutrition advice online. If anything, there’s too much.
But in all that noise, I noticed a gap. Because most nutrition programs completely ignore one important part of nourishment: the way you eat.
I wanted to create something that looks at the full picture. A place where food feels joyful again. Trustworthy instead of something that constantly suggests you’re doing it wrong.
But something that helps you rediscover what food actually is. You know...without the noise.
To do that, you need three things:
- Good ingredients.
- Taking preparation back into your own hands.
- And a safe environment.
That's why I started The Honest Eating Method.
What will this program change for me?
Silencing diet culture was the best thing I ever did. Also the hardest.
But it gave me something back: space. Space to enjoy food again. Space to enjoy life again. And honestly… space to just be me.
I can’t promise it will change your life as well. But I do think it will help you feel steadier. Better informed and more in control (in a calm way). So you can eat well… without all the “shoulds” and “shouldn’ts.”

What kind of meals do you make?
The easy ones. The ones that taste good. The ones you can make from scratch… without spending hours in the kitchen.
I’m not here to turn you into the next Martha Stewart. Perfection is not the goal. Participation is. Being present with food again. Eating in a way that feels real. For you. And only you.
I live in Italy, so yes… you’ll see a lot of Mediterranean flavors. But personally, I feel best when food goes back to the basics. Tomatoes that taste like tomatoes. Pumpkin when it’s actually in season. Good olive oil. Garlic. Fresh herbs. My meals are built around ingredients. Not many. Five, maybe six.
Because when the ingredients are good, you don’t need much else.
Why are there no calorie counts or macros in your recipes?
Ah. Yes. That’s very intentional.
At it's core, The Honest Eating Method is a program about food and how to feel good about eating it without turning every bite into a calculation.
So if you’re looking for strict plans, weight hacks, or lists of forbidden foods… I’m probably not your nutritionist.
I look at health differently.Through flavor.
Safety. And enjoyment.
Not through numbers and restriction. Because… those numbers? They are often very inaccurate, and also incredibly triggering for many.
I want you to focus on how the food tastes and how it makes you feel, rather than hitting a numerical target.
I’m not a chef. Nor do I want to be. Can I still do this?

The goal is not to make you the next Martha Steward. The goal is to build awareness, consistency, and habits that lead toward feeling healthier and confident in your own skin.
I want to help you rebuild your relationship with food. So I want you to focus on how the food tastes and how it makes you feel.
If home cooking gives you a bad feeling, then don’t pressure yourself into something you’re not comfortable with. I’m here to give you the foundation, not tell you exactly what to do.
That said, the majority of my recipes are simple and straightforward. And as flexible as you need them to be.
